The way to choose the fish
With this specialty, we should choose snake eel which has much meat. The fish is cleaned and cut into thin pieces. Then it is put in a bowl, added lemon juice, well mixed and wringed then put in another bowl.

The special material in the raw fish
In this recipe, we cannot forget an important ingredient to eliminate the fishy is “thính”. It is made by mincing fried rice. Mixing fish and “thính” is a step that requires sophisticating skill. “Thính” has to cover all the meat then it will be performed on the dish.

The raw fish’s sauce
The second work that makes up this raw fish’s taste is making sauce. The sauce is made of “mẻ” (a Vietnamese traditional ingredient). “Mẻ” is boiled with minced bone, onions, salt, sugar, and chili.
Especially, when eating this raw fish people often use with many kinds of vegetable, such as basil, cilantro, dill,… and some adding spices, such as green banana, sour star fruit, chili and rice sheet. All of them are used with raw fish to make up this dish’s unique taste.
